Grilled Salmon Pasta with Caramelized Mushroom + Artichoke & Garlic Cream Sauce

one of my favorite things about being in LA so far is all of the little neighborhood markets there are. we've popped into our fair share of them, but my favorite so far has been LA HOMEFARM. think tons of fresh produce, flowers, organic pantry staples, etc etc (not to mention they had a beautiful selection of ceramics and vintage baskets to use while you're shopping). we made a little bouquet and also an impromptu decision to plan a delicious dinner for that night to replace our frozen chicken nuggets plan.

along with some fresh mulberries, cherries, and tomatoes, we snagged some delicious-looking mushrooms, a big hunk of parmesan cheese, some organic pasta, and most importantly the most delicious artichoke & garlic cream that I think changed my life. I couldn't pass it up. cut to dinner time, and I realize we have some salmon in the fridge that we need to eat, and a new favorite pasta dish wash born. enjoy! xx

grilled salmon pasta with caramelized mushroom + artichoke & garlic cream sauce

1lb mushrooms

olive oil

artichoke & garlic cream

heavy cream

pasta of choice (we used this from LA HOMEFARM)

1lb salmon

lemon

parmesan cheese

fresh dill


slice 1lb of mushrooms. heat 2tbsp of olive oil in a skillet on medium heat. add in the mushrooms until they caramelized and turn a deep, golden brown. set aside. in the same skillet, add the artichoke & garlic cream. add a splash of heavy cream and stir. add some salt + pepper to taste and turn the heat to low once it's nice and warm. meanwhile, cook your pasta. reserve about 1 cup of pasta water and drain when the pasta is al dente. add a splash of pasta water to your sauce if it's getting too thick, add more salt + pepper if needed. add the caramelized mushrooms to the sauce. at some point during this sauce-making process, cook up some salmon whatever way you'd like (we cooked ours out on the grill because we're soaking up every minute of having a backyard this summer). to serve, add some pasta to a bowl, top with sauce, add salmon on top, and add a little more sauce. top it all off with a drizzle of lemon juice, some lemon zest, fresh parm, and fresh dill.

(pair with some chilled white wine - we went with this and it was perfect.)
